Hip Shorts: The Adventures of the Healthy Apple Pie

Starting my senior year of college I have had an urge to make a healthy apple pie. I can’t remember why I got this idea, I just remember thinking, all that apple pie contains is, apple, some filling, crust and sometimes a topping. Why can’t all of these pieces be healthy? Why not be able to eat dessert and not only have something that tastes good and isn’t bad for you, but is actually good for you. So I found myself at the store trying to pick the ingredients for the apple pie. For the apples I got – apples, that one was easy. For the filling – Yogurt, I thought it would hold it together and yogurt adds a healthy flavor boost. For the crust – Cinnamon apple Bear Naked Granola, Granola is very healthy and very tasty.
So the first step is making the crust. I took the granola and put it into a blender to make a powder. I then mixed in a little yogurt to keep it together. Then take the concoction and spread it onto the bottom of a pan. The first time I made this I made the mistake of not baking the crust a little by itself so that it can set up without the apples. Then i painstakingly skinned and but 5 apples. This is the point when my roommate walked in and asked me if I was baking an apple pie. Yes, yes I was. Added the apples in and as a topping added whole granola across the top.
The next day I took the pie to work and after a few, what the hell is that? from the coworkers, people started to venture in. Now this first one I don’t know if you could really conciser it an apple pie, it was more a hodgepodge of ingredients in a pan. But despite the look it tasted very good and when I got back from my class the whole “pie” was gone.
Since then I have made a couple of more pies and learned along the way. One thing I learned is pealing apples is a lot easier when you use your mom’s crank apple peeler that peels, de-corks and slices all in one. I have also not successfully gotten the crust to easily come off of the pan. I did learn on the last one that oats are a good addition to the crust. Also haven’t found a great way to get the apple to soften up, I think they normally sit in some kind of sugar that loosens them up. I am sure I will learn every time that I try to make these and hopefully in another couple of year I will be a master of the healthy apple pie. You have any tips let me know. If I learn anything else I will post an update.
